Pineapple Acai Bowl: Hawaiian Style (Recipe Included!)

Today I started my day off with a pineapple acai bowl that I made, and wanted to share it with you all! I wanted something healthy but "different" for breakfast this morning, and this pineapple acai bowl was the perfect choice! It was love at first bite!
If you are not familiar with acai, it is amazing! It's a small berry full of antioxidants and omegas. They are not only great energizers, they are great detoxifiers! I felt so healthy and rejuvenated after my morning breakfast! I guess it is true: when you eat great, you feel great! The fun part about this recipe is it can be customized to your liking. As you can see in my photos, I added a little bit of everything as a topping! Go ahead and get creative with it! Enjoy!
Ingredients:
For the acai layer:
1 frozen acai pack (I used the Sambazon brand "unsweetened" from Whole Foods -you can also use acai powder)
1/3 cup of coconut milk
1 banana
1 cup of mango slices (fresh or frozen)
1 whole pineapple halved
1/2 cup of strawberries
For the toppings:
Strawberries
Blueberries
Granola
Coconut
Organic Honey
(You can also use nuts, dried fruit, or whatever else you like!)
Instructions:
-Carefully slice a whole pineapple in half, and then carve out the middle of one half to use the pineapple as a bowl.
-Blend the acai, coconut milk, banana, and mango slices, and strawberries in a blender until smooth (1 1/2 - 2 minutes)
-Pour the acai smoothie mixture into your "pineapple bowl"
-Garnish with granola, banana slices, coconut, strawberries, blueberries, or other toppings of choice. I sweetened mine by pouring a little honey on top as well. Bon appetit!
