Blueberry Protein Pancakes (Week ONE and Six Week Health)
“Breakfast is the most important meal of the day” well I like many always struggle with it be it lack of time or lack of options I find it difficult to get breakfast in, let alone get one in that will supply you with the nutrition and macros you need. So as part of @healthsquared Six Week Health Challenge, I decided that I will start my day a little differently with some protein. I had a rugby match this morning so I thought this would be the perfect time to try this out.
Ingredients:
(makes 3 to 4 pancakes)
- 1 scoop protein powder (All I had was strewberry, venilla would probably be better)
- 3 egg whites
- 64g porridge (oatmeal to the Americans reading)
- 1 medium banana (ripe as you can get)
- 64g blueberries
- 2 tsp baking powder
- ½ tsp cinnamon
Preparation
1 - Place raw porridge in a blender or food processor and blend until it becomes fine flour, I used a Nutribullet

2 - Add eggs, banana, protein powder, baking powder and cinnamon and pulse blend until smooth.
Handy trick for removing egg yokes (Just don’t do what I did and break the yoke trying to get a good picture, but hey a little yoke never hurt anyone)
3 - Toss blueberries into the batter and stir it up
4 - Place a pan on medium-high heat and measure out about 1/8 cup or 2 tbsp of batter per pancake.
5 - Cook them for about 45 seconds to 1 minute on the first side each side or until golden brown
6 - Serve with some lemon
Ready to eat
I’m not going to lie I put a knob of butter on these, I can resist butter, but hey I had a match later that day all was good. These were really tasty, they have a slightly different texture compared to normal pancakes but still taste lovely.I also added some summer fruits that I warmed in the microwave for a bit of moisture and some micronutrients.
Macros are approx
70g carbs (more with the summer fruit)
12g fat (more with the butter)
50g Protein
