Homecooking Adventures 3: Pork & Veggie Stir Fry - Week One of the Six Week Health Challenge!
For my Saturday night dinner I threw together a veggie-filled stir fry as a part of the Six Week Health Challenge. Here's a look at what I made:
Cutting down on carbs even for one meal can have a great impact on overall health!
Ingredients
Pork Belly (you can replace with an even leaner protein)
Onion, Garlic & Shallot
Broccoli
Spinach
Bok Choy
Basil
Olive oil & sesame oil
Chilli flakes & black pepper
Cooking involved browning the onion, garlic and shallots with olive oil and chilli flakes in one pan at medium/low temperature. Browning the pork in another pan at high temperature and then moving it to rest with the onions. Then stir frying the veggies with a little water before combining everything with sesame oil and some black pepper to finish!
Turned out to be a great tasting, low budget, healthy meal which my grandmother and I really enjoyed.
