Week six of the six-week health challenge #sixweekhealth: Pumpkin salad

I want to send greetings to the great steemit family, especially to @ sweetsssj and @healthsquared, who have given us again the opportunity to participate in another wonderful challenge in this sixth week.
In this week I will make a delicious pumpkin salad. This salad uses simple ingredients and is very easy to prepare. What I like about this salad is that it provides nutrients such as fiber, potassium, vitamin C and E. It helps us with the health of our body.

For the realization of this delicious salad, we will need a pumpkin of approximately 1 kilo, 200 grams of carrot, 200 grams of zucchini, 100 grams of chives, 100 grams of onion, 100 grams of sweet pepper, 100 grams of coriander, 100 grams of parsley, a cup of olive oil, vinegar and salt to taste.

Wash the pumpkin well, cut it in half to remove the seeds. Cut the squash into medium pieces. Add the water and boil over medium heat for about 1 hour with the lid on.

Chop the zucchini and carrot into small pieces and then simmer for 15 minutes.

Chop the chives, onion, sweet pepper, parsley and cilantro in very thin pieces.

Finally all the ingredients are mixed, olive oil, vinegar and salt are added to taste.
