I Am Just Busy

Lately I have been struggling to write something. I've been feeling like I need to get something out there to at least tell the people I am still here.

I am just busy.

Just this week, I have been asked to make a dozen cupcakes. The theme, Ninjago! Woohoo! I get to play with fondant :p

They don't look that great but it was a last minute order and it had to be done with a time limit. I had fun making them and the little boy was very happy.

Today I make a birthday cake. A moist chocolate cake decorated with sweets. Hopefully this time I get a few pictures and can write about it.

This week, the kids and I also planted seeds in hopes to get an early start this time.

Frankie enjoyed putting the soil in squares and taking it back out.

The air has been so dry from the wood stove that I have to water the seedlings everyday. I need to do something about that.

We've also been playing outside making a little home in the snow. So far its just a dug out spot with 2 seats and a table in progress oh and a snowman. I didn't take any pictures when we went out, just spending the time with the kids took both my hands :)

Lately I have also been working at my parents restaurant 3 evenings a week. Thursdays, Fridays and Saturdays I work as a cook for 4-5 hours. Just a little something to help pick up the slack on payments during the winter. Electric bills can be crazy here.
Talking about food, a friend came to visit me after work and we had supper together. She is on a diet and had asked me to make her healthy food. So this is what I made

Rice, chickpeas mixed with a tomato sauce made from whole tomatoes including carrots, turnip, onions, cauliflower, garlic and for spices, ginger, cinnamon, tumeric, cumin and coriander. All that topped with fresh spinach, hemp hearts, chia seeds, a dollop of greek yogurt and dried cranberries.
I usually make this dish with quinoa instead of rice but I had none on hand, and also dried apricots instead of cranberries. Ran out of that instead. A meal that is jam packed with vitamins, perfect to regain strength during this long winter season.

So my time is being juggled around with kids, baking, activities, practicing Kuk Sool, and trying to have quiet mornings where I can spend it on here, trying to catch up with everyone.

And with that, I have to end my tranquil moments this morning to bake and run after little Frankie.... she needs a bath.

I miss chatting with you as well ^_^ Although when I do in the morning , my brain is not active lol.
Thank you for your comment, the ninjas were fun to make. The kids loved watching me make it too lol.

What i love about this post. Is the day to day things. The memories the kids will have doing these things with you! Things they will share with their children!

Honestly, I got soooo hungry I was in pain ... and I was a lil jelly of your kids. LOL
