Peanut Veggie Noodles

I am new to the food blogging world so I wanted to become part of the Steemit community to keep me on my toes with blog posts and building my recipe base. I post vegan recipes that are quick and simple. My boyfriend and I work 9-10 hour days, 6 days a week so we need meals that are quick when we get home. There are so many amazing vegan cookbooks out there, but most of the time the meals take too long to prepare. I thought I would find delicious vegan recipes and modify them to fit our family's lifestyle. I hope you get a chance to enjoy some of the recipes I post!

The base of this recipe came from forks meal planner. I discovered this website after watching the documentary forks over knives, which I highly recommend, along with what the health. They are documentaries about dietary impacts on our health and what the food industry will do to ensure their products sell, even if it's at the expense of our health. I especially like what the health because they provide all of the references on their website so you can check their sources. It also gives you a nice starting point to do research of your own. Additionally, their references are from highly cited, peer-reviewd journals, which is very important to me since that's what I depend on everyday for my research.

This recipe is a whole food plant based (WFPB) dish that made me realize once you're vegan, a WFPB diet isn't that hard to achieve. Now I just have to convince my boyfriend that. We made two WFPB dishes this week and he actually said "if everything tastes this good I'll have no trouble switching"! Currently, we're no where close to a WFPB diet, but we're trying to adapt it as much as possible. Some easy switches are whole wheat pasta or rice instead of the white alternatives. We are also trying to have 1-2 WFPB meals a week, which I'm hoping will increase as time passes. Anyway, I hope this recipe shows you how delicious WFPB meals can be!

Ingredients

• 8 oz brown rice noodles
• 2 zucchinis
• 3 medium carrots
• 2 bell peppers
• 2 tbsp fresh ginger, grated
• 3 cloves garlic, minced
• 1 cup water
• 1/4 cup peanut butter
• 2 tbsp maple syrup
• 3 tbsp low-sodium soy sauce
• 2 green onions
• crushed red pepper flakes (optional)

Instructions

  1. Cook noodles according to package.
  2. Combine water, peanut butter, maple syrup, soy sauce, ginger and garlic in large sauce pan. Bring to a boil while stirring continuously then reduce heat to medium-low and cook until sauce thickens (5-7 minutes)
  3. Chop zucchini, carrots, and pepper then add to sauce pan. Cook veggies for 4-6 minutes.
  4. Toss noodles with sauce and veggies. Garnish with green onion and red pepper flakes.

My boyfriend and I also work crazy hours and hardly ever have the time to make complicated long recipes. Thank you for sharing this one, I have made dishes with a peanut sauce before and they always taste so good 🤤
