Delicious and sweet grape salsa

I made the shrimp with grape salsa and pearl couscous dish from Sun Basket tonight, and while the majority of the meal was good-but-not-amazing, the grape salsa was a standout hit. It's bright, summery, and sweet without being too syrupy or sugary - and even better, it's fast and easy to make. (This recipe serves two.)

Ingredients

  • 5 ounces red and green grapes
  • 1 lime
  • 3 or 4 large sprigs fresh cilantro
  • 2 tablespoons roasted pumpkin seeds
  • 1 tablespoon olive oil

Directions

  • Remove any stems from the grapes; cut the grapes in half.
  • Juice the lime
  • Coarsely chop the cilantro.

In a medium bowl, stir together the grapes, the lime juice, cilantro, the pumpkin seeds, and 1 tablespoon oil. Season to taste with salt and pepper.

That's it! So simple, but so so good! This may be my new go-to for quick things to make for potlucks and parties. Enjoy!

Is it kind of like mango salsa? Sounds interesting.

A bit less sweet. I love mangos, but mango salsa can be a little too sweet for me in the context of dinner (versus, say, dessert.) The cilantro adds just a little bitterness that cuts a little of the sweetness of the grapes, but still leaves them sweet without being overbearing.

Hm, interesting! I've never tried it before, but grape salsa sounds really pleasant and refreshing.
