Can't Beet It? Color Challenge Monday/Red

I made a yummy vegan lentil/beet stew over the weekend.
I threw together what I had in the fridge. Turned out super delicious and nutritious.
I thought it would be a great recipe to share for today's color challenge Red.

I've been getting into eating lots of beets, yellow and red ones, perhaps I'm craving some more iron in my body, after eating them raw or cooked I have lots more energy..
Experimenting with different recipes raw and cooked, mostly with what I had on hand.

Ingredients
2 Large Red Beets, (you can peel if you prefer, cube/dice cut into 1/4-inch pieces.
The Beet greens, stems and leaves are especially high in nutrition, so if they are organic use all parts.
1 Large Yellow or Red Onion, peeled and diced.
4 cloves garlic, finely chopped (let sit to air at least 5 minutes, this aids in digestion)
1 TBS finely chopped ginger,
2 TBS olive oil
2 cups green lentils
5 cups water
1 cup chopped celery
1/4 cup chopped parsley (optional)
1 tsp ground coriander
1 tsp turmeric powder or 1tsp fresh super chopped
1 tsp cumin powder
1/2 tsp mustard seeds
1 tsp Sea Salt
1/4 teaspoon freshly ground black pepper
1 tsp nutritional yeast
1TBS balsamic vinegar (optional)

In a big soup pot or frying pan, on med heat Saute onions to light brown in 1Tbls olive oil.

In a pestle/mortar grind coriander, turmeric, mustard and cumin together then add to onion pot with chopped ginger and garlic and celery, saute for about 3 more minutes.

Add 2 cups of lentils after rinsing them and 5 cups of water to pot. Bring to boil then turn down and simmer

After turning down to simmer add all the chopped beets and stems to pot and simmer for about 15 to 20 minutes.

After 20 minutes add the beet leaves, salt, freshly ground pepper, parsley and another Tbs. of olive oil, and 1TBS balsamic vinegar mix well and turn heat off and let sit for another 10 minutes. If vinegar is too strong for you, you can leave it out. At this point I put nutritional yeast added to each serving.
