American Goulash - Hungarian version

As I mentioned in my earlier article about my Grandfather (https://steemit.com/life/@austinbill/my-grandfather) I am of Hungarian descent.  And, now that I live alone, I am always seeking recipes that are easy to make, and that I can make a number of servings (dinners).  I found a recipe for something called American Goulash online, but was most disappointed when I saw that the recipe called for adding cheese, in lieu of sour cream, AND did not call for any paprika, a stable in any Hungarian recipe.

So, I made a batch, tried it, then over the next few weeks, I altered the recipe to be more reminiscent of the fine dishes that my grandmother and aunts made, when I was a youngster.  YOU are the recipients of that experimentation!

Ingredients:

  • 1 lb ground turkey (it is healthier than ground beef, and you can't really tell the difference!)
  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 2 cloves fresh garlic, minced
  • 28 ounces diced tomatoes
  • 15 ounces tomato sauce
  • 1 lb elbow or other macaroni


  • 1 teaspoon black pepper
  • 2 Tbsp celery salt
  • 1 Tbsp parsley --- or, Fresh
  • 1/3 cup sweet Hungarian paprika
  • ½ tsp thyme
  • 1 bay leaf
  • sour cream

Method:

Dice onion and green pepper. 

Brown onion and green pepper, in olive oil, until onion is translucent.

Add ground turkey and cook until done.  

Drain mixture before adding sauce and tomato.  

Add tomatoes and  tomato sauce.  

Add spices.

Simmer mixture for 45 minutes.  Let the flavors and spices truly come together.

Meanwhile cook up the full package of macaroni.  Drain and set aside.

Serving:

In a large soup bowl, put a generous serving of macaroni.

Add a nice portion of Goulash over the macaroni.

Top with a dollop of sour cream.

Add salt and pepper to taste.
