How To Make Nigerian Chicken Pie
Chicken Pie is a yummy healthy snack, made with minced deboned chicken and vegetables. It is delicious and easy to make. I have the best recipe for this.
It is very similar to Nigerian meat pie, the only major difference between the two snacks is the meat used in the filling. But I think Chicken Pie is more healthy.
Below is a detailed recipe for you to follow and make the best Chicken Pie ever.
Ingredients For Chicken Pie Filling
• 300g of minced chicken breast
• a medium-sized onion
• a little garlic/garlic powder (optional)
• 2 medium-sized carrots
• 2 medium-sized Irish potatoes
• a cooking spoonful of Vegetable Oil
• Seasoning of choice (Maggi / Knorr)
• 1 teaspoon of thyme
• 1 teaspoon of curry
• 2 tablespoons of plain flour
• Cool water -- 200ml
• Salt -- to taste
Ingredients For Chicken Pie Dough:
• 500g Plain Flour
• 1 teaspoon Baking Powder
• 3\4 teaspoon Salt
• 200g Margarine
• 75 ml Water
Directions For Making Chicken Pie:
• Grind or mince the chicken. Chop or mince the onions and set aside. Wash and peel the carrots, Irish potatoes then rinse and cut into very tiny cubes.
Chicken Pie
• Heat up the oil on medium heat. Add the chopped onions and fry a bit then add the minced chicken and stir fry till it turns white.
• Now, add 1 cup of water to the pot, then the curry, thyme and garlic powder. Cover the pot and leave to boil.
• When it starts boiling, add salt to taste, the chopped carrots and potatoes and cook till the vegetables are done.
• Next, dissolve 2 tablespoonful of the plain flour in half cup of water. Mix well and add it to the chicken pie filling in the pot.
• It helps to bind the filling together and keeps it moist when baking. Mix thoroughly and set aside to cool a bit.
Directions For Chicken Pie Dough
• Break and beat the egg then set aside. Grease an oven tray, by evenly rubbing a little margarine inside it. Or use baking sheets to line the tray as substitute and set aside.
• Next, put the flour in a bowl, add the baking powder and a pinch of salt then mix properly. Add the margarine and mix thoroughly until the mixture looks more like bread crumbs or garri.
• Now, add just a little cold water, bit by bit and keep mixing till you get a stiff dough. Knead the dough very well and leave to rest for 5 minutes then place on a lightly floured table afterwards.
• Next, roll the dough on the table, and make sure its not too flat or too thick. Then cut it into several squares and rectangles. Scoop some Chicken Pie filling and place in the center of the shaped dough.
• Don’t add too much filling, else the Chicken Pies would be bumpy at the top. Rub the whisked egg on the edges of the dough. (It helps to seal it).
Chicken Pie
• Next, fold one side of the square or rectangular dough to join the other side and use a fork to press the edges on each other. You can also make tiny holes at the top using a fork.
• Repeat this process for the remaining dough and transfer unto the greased tray. Next, preheat the oven at 335°F or 170°C.
• Rub the whisked egg on the surface of all the Chicken Pies. It helps to give them a golden glow after baking, but this is optional.
• Next, place the Chicken Pies in the preheated oven and leave to bake for 35 minutes or till they are lightly browned.
