I Love to bake Pumpkin Pies!!!
Homemade Pumpkin Pie and Pie Crust
Pumpkin Pie
Ingredients:
-1 pie pumpkin
-1 ⅓ cup of sweet condensed milk
-1 large egg
-1 ¼ tsp cinnamon
-½ tsp nutmeg
-½ tsp ginger
-¼ tsp of cloves
-1 cup of hot water
-9 inch pie crust
Directions:
1)Preheat the oven for 350
2)Cut the pumpkin in half without the stem.
Scoop out the seeds & guts.
3)Place cut side down on foil lined baking sheets.
Cover with more foil and bake til-tender 1-2 ½ hours.
4)Let pumpkin halves cool.
Then scoop out flesh and mash with potato masher or use a food processor until same consistency.
5)Beat together smooth pumpkin, condensed milk, egg, cinnamon, nutmeg, ginger, cloves, and hot water.
Mix well.
6)Pour into 9 inch pie crust (follow pie crust direction).
Bake at 375 for 55 to 65 minutes.
Then let cool.
Before Baking:
Before I bake my pie I put a light coat of Pumpkin Pie Spice and Cinnamon on top.
After Baking:
When my pie comes out I like to put a good coat of Powder Sugar on top.
Martha Stewarts Pie Crust
Ingredients:
-1 ¼ cup of all-purpose flour
-½ tsp of salt
-½ tsp of sugar
-1 stick of butter cubed
Directions:
1)Mix all-purpose flour, salt and sugar in a medium-size bowl.
Use food processor to cute butter stick into smaller pieces.
Work mixture together till coarse meal.
2)Start with 2 tbsp of ice water;
work the mixture till dough comes together.
If still crumbly then add 2 tbsp more of ice water.
Be careful not to overwork the dough.
3)Flatten into a disk; wrap the dough disk in plastic;
refrigerate at least 1 hour.
4)Roll the dough disk out on a well floured surface into 14 inch round.
Carefully place rolled out dough onto 9 inch pie plate.
5)Fit gently into bottom and side of plate.
Use kitchen shears to trim dough into a 1 inch overhang;
fold under and seal to form a rim.
6)Crimp with fingertips and knuckles.
