It's the first day of November, lets roast some pumpkin seeds!
Hey everyone! Yesterday was the first day of November and it was a very chill day! It was the calm after the Halloween storm, for sure. After I got Cassie off to school I went back home, lit some candles, put on some coffeehouse music, and got ready to roast some nummy pumpkin seeds! nom nom!
Here is a recipe to make pumpkin-spiced pumpkin seeds! Did you know there is no actual pumpkin in pumpkin spice? So weird right? Well were gonna add the pumpkin haha
Alright so what you will need:
About 2 cups of seeds, olive oil, sugar, cinnamon, nutmeg and allspice.
First you wanna wash the seeds. Make sure you get all the pumpkin guts (pulp) off and then, using a strainer, rinse them in cold water. Let the seeds air dry for a bit. Then toss the seeds in a spoonful olive oil.
Spread the pumpkin seeds evenly on a baking sheet. Bake at 375 degrees for 15 minutes, shuffling the seeds around about every 5 minutes. After 15 minutes, you should be able to really "smell" the seeds, if that makes sense lol like they smell cooked.
Place the seeds into a bowl. Stir in all other ingredients.
2 tbsp suger
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
Once all the ingredients are mixed you have yourself a bowl of pumpkin-spiced pumpkin seeds! Yum yum!!
Oh, and guess what I found out!! November 1st was also World Vegan Day! Happy belated Vegan Day to all my fellow vegan bloggers!
