Banana Fritters
Ingredients
two ripe bananas
two tablespoons milk
two eggs
one tablespoon margarine, melted
one cup all-purpose flour
three tablespoons white sugar
one teaspoon baking powder
half teaspoon salt
quarter teaspoon ground cinnamon
one pinch ground nutmeg
one quart oil for frying
one cup confectioners' sugar for dusting
Instructions:
In a large bowl, mash the bananas. Combinr in milk, eggs and margarine till smooth. In a separate bowl, combine flour, sugar, baking powder, salt, cinnamon and nutmeg. SMix dry ingredients into banana mixture. Heat oil in a deep fryer or heavy bottomed pan to 375 degrees F . Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, 2 to 8 minutes. Drain on paper towels and dust with confectioners' sugar.
