Meals of Mexico with Juanita Perez #239
Green Rice
INGREDIENTS
one tablespoon vegetable oil
one cup uncooked white rice
two cups water
one bunch fresh cilantro
one teaspoon salt
INSTRUCTIONS
Heat oil in a medium saucepan and cook rice, mixing frequently, till transparent, two to three minutes. Combine water, cilantro, and salt in a blender; blend till smooth and cilantro is chopped very finely. Pour over rice and increase heat to high. Bring to a boil and cook for three minutes. Reduce fire to medium-low, cover, and cook till rice has absorbed all the liquid and is soft, about twenty minutes.
Remove rice from heat and fluff with a fork. Cover and let stand for five minutes before serving.
