Mexican Rice

Recipe Servings: 8
Cooking Period: 50 Minutes

Ingredients

three tablespoons vegetable oil
half cup diced onion
one and half cups uncooked white rice
one cup chopped green bell pepper
one teaspoon ground cumin
one teaspoon chili powder
one and half (eight ounce) cans tomato sauce
two teaspoons salt
one clove garlic, minced
quarter teaspoon powdered saffron
three cups water

Directions

20 Minutes
Cooking Period:
30 Minutes
Ready In:
50 Minutes

In a large sized pan, heat up the vegetable oil over a medium-low heat. Put the onions in the pan, and saute till golden.

Put rice to pan, and stir to coat grains with oil. Blend in green bell pepper, cumin, chili powder, tomato sauce, salt, garlic, saffron, and water. Wrap, bring to a boil, and then reduce heat to simmer. Cook for thirty to forty minutes, or till rice is tender. Mix occasionally.
