420-Friendly Pumpkin Donuts w/ Maple Glaze [Vegan, Sugar-Free]

Hi, there.


If you clicked on this recipe, I'm guessing you're thinking something similar to: "Oh my God, is there such thing as a tasty and sugar-free donut? I don't think so."

The initial assessment is fair, I'll give you that. But, you might be surprised to learn that yes -- it is possible to make 420-friendly, sugar-free desserts that don't taste like styrofoam or ass. Let me prove it to you.

I first created these pumpkins for my blog, Bloom for Life. (It was a long time ago, hence the sub-par photos) I'm a health nut and cooking is one of the ways I burn off stress. When I created these, however, my mood shifted to something close to euphoria. Why? Because they are that good.

I know, I know. You need to test 'em for yourself. Once you do, pleeeease return to this page (bookmark it, you fool) and comment below. We love comments, and I want other people's thoughts on these donuts.

These donuts are awesome with a maple glaze. Though I didn't add any to the original pumpkin donuts (instead, I sprinkled powdered sugar on 'em), I have included a recipe for glaze below. Without further ado...

420-Friendly Pumpkin Donuts [Sugar-Free, Vegan]


Serves: 10

Preparation Time: 30 Minutes

Ingredients


2 eggs (or substitute 2 Tbsp Flax + 6 Tbsp Water, mixed)

3/4 cup pumpkin puree

1 tsp vanilla extract

1/2 Tbsp pumpkin pie spice

1/4 cup fresh almond milk

10-12 drops of NOW brand Stevia (more for alternative brands)

1 1/2 cup blanched almond flour

1/4 cup coconut flour

1/2 tsp sea salt

3 tsp baking powder

2 Tbsp cannabis-infused coconut oil

Directions:

  1. In a large mixing bowl whisk the eggs with the pumpkin until smooth.

  2. Add the vanilla and pumpkin pie spice, and whisk again until smooth.

  3. Add the stevia and almond milk, and whisk again until smooth. You can also use a hand mixer for this if you cannot get the batter smooth enough with a whisk.

  4. Add the almond flour to the mixture and whisk again until completely smooth. You don't want to see any lumps or bumps.

  5. Repeat with the coconut flour, being sure all flour is evenly dissolved.

  6. Add the salt and baking powder, and whisk until smooth.

  7. Add the melted coconut oil, and whisk again until your batter is smooth and creamy, and all the oil is combined into the batter.

  8. Drop a small amount of coconut oil (teaspoon or less) into each donut mold in your donut maker. If using a donut baking pan, be sure to grease each mold with coconut oil.

  9. Plug in your donut maker, and allow the temperature to rise for a minute or so. If using an oven, you will want to bake the donuts at 375 degrees.

  10. Scoop a large spoonful or two of batter into a piping bag, and carefully pipe the batter into each donut mold. For fluffy donuts, be sure to really fill the mold. They won't rise very high if you only fill the mold 3/4 of the way full.

  11. Close the donut maker, and allow the donuts to bake for 3-4 minutes. Carefully flip your donuts with the tool provided in the donut maker box, close the lid and bake for an additional 3-4 minutes. If baking in the oven, bake donuts for 12-15 minutes, being sure to start checking them at 10 minutes.

  12. Remove donuts, and allow to cool on a baking sheet lined with parchment paper. Once cool, you can drizzle them with raw chocolate or sprinkle them with vanilla SunWarrior protein powder like I did. (It makes them taste like powdered donuts!)


Simple Maple Glaze


Preparation Time: 10-15 minutes

Serving Size: 1 batch

Ingredients:


1/4 cup unsalted (vegan) butter

1/2 cup pure maple syrup1

1 cup sifted confectioners' sugar

(optional) 1/2 teaspoon maple extract

Directions:

  1. In a small saucepan over low heat, melt the butter and maple syrup together, whisking occasionally. Once the butter has melted, remove from heat and whisk in the confectioners' sugar. If desired, add the maple extract. Set the glaze aside and allow to cool and thicken.

Notes:

Organic ingredients are always preferred

To determine the dose, divide the total mg of THC in the 2 Tbsp of THC by 10 donuts. For example, if 2 Tbsp had 30 mg each, we would have a total potency of 60 mg in the entire batch of donuts. 60 / 10 = 6 mg. So, each donut would have about 4 mg of THC. Awesome post, very well written, great humor! The last thing I would want to do was eat a donut that tasted like ass...

Dosage is super low, suitable for micro-dosing. But if they're as good as you say who knows, I guess I could eat 7-8 of em... lol
