DEVILED EGGS
6 large eggs
1/2 tsp baking soda(not necessary but it makes the eggs really easy to peel)
2 tbsp mayonnaise (make your own, way better)
salt and pepper to taste
1/4 tsp dijon mustard (or whatever you have around)
chopped fresh chives(again, if you have them)
paprika
small ziplock baggie
any kind of lettuce
Fill a pot with water and add baking soda and eggs. Bring to a boil and let boil for 7 minutes. Remove and put in cold water until chilled. Peel eggs and cut in half, put the yolks in a separate bowl. Place lettuce leaves on a platter and put the half eggs on it with hole side up. Add mustard, mayonnaise, salt, and pepper to the bowl and mix vigorously with a fork, you want it kind of whipped. Spoon yolk mixture into the baggie and squeeze down into a corner. Use scissors to cut a small hole in the baggie and squeeze the mixture into the eggs holes. Sprinkle with paprika and chives and chill until serving.
