Continuing! Welsh cakes but with chocolate

This time the Welsh cakes I'm making are different

As there was not enough room for this part in the previous Welsh cake post (traditionally made), my post this time is how I made Welsh cakes with chocolate and vanilla essence, instead of the traditional raisin filling.

chocolate Welsh cakes!

This follows the same base ingredients as before of:

Plain flour 225g (the recipe is supposed to use self-raising but I didn't have any)
a teaspoon of baking powder
pinch of salt
butter 100g (softened is easier)
caster sugar 50g
1 medium egg
2 tablespoons of milk

... and instead of the previously included raisins, I used chocolate (a chopped up bar) and a teaspoon of vanilla essence!

Just like before, I added my dry ingredients to a large bowl, and melted some butter (a bit better than before).

Then, after mixing it together and crumbing it with my hands, I added the cut up chocolate (it's easier to chocolate chips) and mixed it together.

After this, I combined it together with the milk and egg, just like in the previous post, this helped me form a ball of dough that I divided into two. Here's a picture of the first ball ready to be flattened!

Then after cutting them into shapes, they were ready to go on the pre-heated griddle!

And it was done! The picture below has the raisin Welsh cakes included in the top half.

Welsh cakes nowadays are very flexible as not everyone likes raisins haha, so you can find a wide variety that suit different tastes, even ones with jam inside!
