Recipe: Lemon bars - Easy, quick & delicious

Hi guys,

Sharing this delicious recipe I had never heard of before I tried baking it! It's very easy and quick to make, the perfect balance between sweet and tart. Really worth trying !

To be eaten right away, or they freeze very well also ;)

Shortbread Crust:

1/2 cup (113 grams) of butter
1/4 cup (30 grams) of icing sugar
1 cup (130 grams) of flour
1/8 teaspoon of salt

Lemon Filling:

1 cup (200 grams) granulated sugar
2 eggs
1/3 cup (80 ml) of lemon juice ( 2 lemons)
1 tablespoons (5 grams) of grated lemon zest
2 tablespoons (25 grams) of flour

Lemon Bars: Preheat oven to 350 degrees F (177 degrees C). Butter an 8 x 8 inch (20 x 20 cm) tray.

Shortbread Crust: In a big bowl or with a hand mixer, beat the butter and sugar until creamy and smooth. Add the flour and salt and beat until the dough just starts to come together. Do not over mix. Press onto the bottom of your prepared pan and bake until lightly brown around the edges (20 minutes or so).

Lemon Filling: Beat the sugar and eggs until smooth. Add the lemon juice. Add in the flour. Pour the filling over the crust and bake for about 18 minutes.

Cut into squares and dust with powdered sugar.
