Recipes for people who don't follow recipes #01 -Spinach, beetroot and goats cheese love tart

This recipe is easy, quick, (relatively) healthy and vegetarian.

Ingrediants:

Pastry:
225g plain flour
100g butter, diced
pinch salt

Insides:
spinach (a handful)
2 x beetroot (pre- cooked)
1 small roll of goats cheese
1 cup of cooking cream
2 eggs

Pastry - sift the flour into a bowel and add the butter in small chunks.Use (this is super important) the TIPS of your fingers to mix it together until it looks like break crumbs. Add a few teaspoons of water (if you add too much it gets hard) mix in salt and roll out as dough. make into a FLAT circle wrap in cling film and leave it in the fridge for 15 minutes.

While the pastry is cooling, mix the ingredients into a bowel, mixing the eggs well (even add an extra egg white if you like!)

Rub butter round your baking tray throughly for the non stick happiness.

Next get your dough out of the fridge. It will need a few minutes (say 6 mins) to stop being so damn cold. Roll it out and stick it in your baking tray. Some people cut the edges or press the edges with a fork or cut around to make a nice shape. I just take it easy.

Put in oven at 250 for AROUND 40 mins. But this will depend on your oven. High is good but i tend to turn it down a notch half way through.

To make sure it's cooked - put a knife in the middle. If it comes out wet then carry on cooking (note - sometimes it comes out a little wet if there is too much cream so it's good to use your common sense on this one. 40 mins is a good amount of time. Check to make sure it's not burning. :D

Take out and enjoy with someone you love or have solo with a beautiful glass of red wine and Netflix.
