How to make braised fish in the cool day.
Ingredients.
- 500 grams of largehead hairtail fish.
- Green onion.
- 2 cloves of garlic (sliced).
- Ginger.
- 5 grams of corn starch.
- 1 tbsp of tomato sauce.
- 3 grams of salt.
- 15mls of white wine.
- 15mls of soy sauce.
Step by step guides.
Step 1:
- Mix well fish with white wine and ginger for about 5 minutes and rinse again with cool water, drain and cut it into pieces.
- Drain and rinse well green onion and chopped.
- Peeled ginger and very thinly sliced.
Step 2:
- Put fish and 1/2 ginger, garlic + 15mls of white wine, 3 grams of salt, 15mls of soy sauce into a large bowl. Marinate for at least 30 minutes for soak up.
- Heat about 30mls of cooking oil in a frying-pan, add the fish, fry well on the each side until golden. Set aside.
Step 3:
- Put 1/2 ginger, 1 tbsp of tomato sauce, 300mls of cool water into a cooking-pot, mix well until the tomato sauce is dissolved.
- Mix well 4 grams of corn starch with a little of water.
- Continue to add the fish in, cover with lid and simmer. When the water is boiling, pour the mixture of cornstarch in, continue to simmer for about 10 minutes until the sauce is thickened, add salt and soy sauce to taste. Sprinkle green onion on top, chilli (if you like spicy).
- Serve hot.
