Venezuelan Chicken Rice Recipe

The rice with Venezuelan chicken reminds me of my childhood, that is why my favorite food and brings me many beautiful memories.

INGREDIENTS:

-1/2 kg Chicken
-2 Cups Rice
-2 Cups Water
-1 Pinch Saffron or yellow coloring
-1 onion
-2 Garlic
-1 Sweet pepper
-1/2 Tablespoon Sweet Paprika
-1 Chive Branch
-1 Leek Branch
-2 carrot
-1 Can Peas
-1 teaspoon English sauce
-1 teaspoon mustard
-1 Laurel Leaf
-1 pinch Salt
-1 pinch Pepper

PREPARATION:

  1. We have to take something into account, before making the rice with chicken about two hours before, you must place the chopped chicken in a bowl, add salt, Worcestershire sauce, mustard and cumin, mix it well.

  2. In a pot, casserole or paella pan, place a drizzle of oil, when it is at medium temperature, place the onion, garlic joint and finely chopped garlic. Once they crystallize, place the scallion also finely chopped. Also incorporate the paprika, the sweet pepper also finely chopped.

  3. In the sauce you have in the pot, add the chicken you have reserved and mix well. Now add diced carrots and bay leaf.

  4. After 5 minutes, add two cups of rice, at this time the chicken should already be releasing all its juices. Now pour half a cup of water painted with half a teaspoon of yellow vegetable powder into the pot and stir. Add the pea and complete the two cups of water and cover for a moment. You should check if it is well salt, add it to your liking.

  5. Let it cook for a period of 15 or 20 minutes, until the rice is ready. Then let it rest.

The origin of this spectacular dish is not really known, it is surely an adaptation of the Spanish paella, since its preparation is quite similar. This paella was brought by the Spaniards when they were in the colonies of America, for this reason all the countries that were Spanish colonies, converted this rich meal as a typical dish of their countries.

I found a more impressive chicken rice recipe, it looks something like this soak the rice for 20 minutes and strain another 20 minutes, then melt the butter in a pan, fry the mixed ingredients with the dry ingredients until fragrant, add the soaked rice with pandan leaves, mix well and transfer to rice cooker. The final step is to pour in the chicken broth and mix well. Turn on the rice cooker.
