Spaghetti al Pesto
The spaghetti al pesto , consist of this popular pasta, prepared with this green sauce. The basil is the ingredient that will turn our spaghetti of this color. Pesto is a sauce with a lot of personality. Both the color and the taste. Garlic and cheese will give a powerful touch while basil, will give an aniseed touch.
Ingredients
- 400g of spaghetti
- 150g of basil leaves. Do not include the stem, that bitter
- 300g of Parmesan cheese
- 2 cloves of garlic
- 100g of pine nuts
- 200ml olive oil
- Salt
Preparation
1.- Cook the spaghetti. Add a handful of salt in a pan with plenty of boiling water. Then add the spaghetti and stir frequently, especially the first minutes of cooking. So that they do not stick to the bottom.
2.- While they are cooking, we prepare the pesto sauce. In a whisking glass we put the basil, the parmesan cheese (or another of your taste but, better that it is cured, with flavor), the garlic cloves, the pine nuts, which you can substitute for nuts or almonds and the olive oil. We beat it well until we have a green sauce and quite dense.
3.- We put the sauce in a large bowl. And when the spaghetti is al dente (it will take about 10 minutes of cooking), we reserve two tablespoons of the cooking broth. About 100ml And we drain the spaghetti from the rest of the water
4.- Immediately, we put the spaghetti in the bowl where we had put the pesto. We add the broth of the cooking, which will give the sauce a more creamy touch and above all it will add a lot of flavor and with a fork we mix for a couple of minutes. So that the spaghetti absorb all the sauce well.
