Tigarun banyak tumbuh di perkampungan warga di Kalimantan Selatan.Keberadaan sayur ini musiman. Saat kembangnya mekar barulah bisa dipetik dan diolah menjadi sayur. Biasanya mekar saat air sungai pasang.Peminat sayur ini hanya kalangan tertentu, yaitu mereka penyuka sayuran pahit.

Maklum saja, karena rasanya agak pahit dan aromanya mirip asinan Bogor. Aromanya kuat sekali dan kuahnya pahit namun pahitnya tak terlalu tajam.

Karena saking langkanya, penjualnya pun bisa dihitung jari.
Di antaranya ada di Pasar Terapung di dekat Menara Pandang, Jalan Kapten Pierre Tendean, Kelurahan Gadang, Kecamatan Banjarmasin Tengah, Kota Banjarmasin, kode pos 70123, Kalimantan Selatan.

Di antara puluhan penjual yang berjualan di sana, penjual kambang tigarun ini pun hanya satu, yaitu Hasnah. Kambang tigarun yang dijualnya pun hanya beberapa bungkus. Sebungkus dijualnya Rp 7.000.

"Ini pun saya beli juga di orang lain. Penjualnya di Pasar Terapung Lokbaintan, Kabupaten Banjar situ. Dia punya kebun tigarun. Di Lokbaintan pun setahu saya hanya dia penjual sayur ini," ujar perempuan berkulit coklat ini.

Dia biasa berjualan di pasar ini tiap Sabtu dan Minggu.
Di hari-hari biasa, dia berjualan di Pasar Terapung Lokbaintan. " Saya baru sekali ini menjual kambang tigarun ini, soalnya barangnya susah. Itu pun tak sengaja juga saya bertemu penjualnya di Lokbaintan situ, terus saya beli lantas saya jual lagi di sini," sebutnya.

Membuat sayur kambang tigarun ini ternyata tak susah. Setelah dipetik dan dicuci hingga bersih, rendam saja di air hangat.
" Airnya pun harus yang baru dimasak supaya sayurnya segar saat disantap. Kalau pakai air yang sudah dingin tak bisa, nggak nikmat lagi," sebutnya.

Proses perendamannya pun harus lama, yaitu berhari-hari.

Kalau kata orang Banjar, proses perendaman sayur selama berhari-hari disebut dijaruk. "Terkadang ada juga yang menyebut sayur ini dengan nama Jaruk Tigarun," katanya.

Sayur ini, makin lama direndam rasanya makin nikmat. Aroma khasnya makin keluar.
"Direndam sehari, dua hari rasanya enak. Tiga hari, empat hari, makin nikmat. Makin lama lagi tambah nyaman," katanya.

Cara memakan sayur ini dengan cara dilalap. Akan makin nikmat jika disantap dengan nasi dan sambal acan khas Banjar.

"Bisa juga dicocol ke cacapan asam atau sayurnya diperahi jeruk purut atau limau kuit. Aroma nikmatnya makin mantap. Makannya pakai nasi panas-panas," katanya.Seorang pembelinya, Risa, mengaku penasaran dengan rasa sayur ini.

Walau dia orang asli Banjar, namun tak pernah sekalipun mencicipi sayur ini karena sudah sangat langka.

"Ibu saya suka sekali sayur ini. Saya sering mendengarnya dari kisah ibu saya saja karena di zaman dia masih muda dulu sayur ini belum langka. Katanya nyaman dan membuat saya penasaran. Rasanya ternyata pahit dan aromanya khas banget," akunya.

Penasaran dengan sayur ini? Coba saja sesekali Anda berkunjung ke pasar terapung dekat Menara Pandang ini. Akses ke sana mudah saja. Bisa naik ojek, kalau angkutan umum sangat jarang melintas di daerah ini. Bisa juga ke Pasar Terapung Lokbaintan di Desa Lokbaintan Luar, Kecamatan Sungai Tabuk, Kabupaten Banjar, Kalimantan Selatan.

Dari Banjarmasin, banyak pengemudi kelotok yang menyediakan jasanya jika ingin ke sana dengan tarif ratusan ribu rupiah. Maklum saja, diperlukan waktu berjam-jam melalui jalur sungai jika dari Banjarmasin.
