Making Tonkotsu Pork Broth Using Instant Pot & Hand Mixer

Equipments used:

  • Instant Pot, 6qt.
  • Steamer basket bought from Aliexpress.
  • Hand mixer

Ingredients:

  • Pork feet (2 feet) 1.90 EUR
  • Pork Lard (2 sticks) 1.21 EUR
  • Leek. A piece found in fridge.
  • Whole Garlic, few cloves.
  • Onion. A half of onion found in fridge.
  • Water. Filled up to 40% of 6qt Inner of Instant Pot.
  • You can get 2.5 Lt of pork broth for about 4 Euro.

Method:

  1. Fill water up to 40% (slightly right below the 1/2 line) of the inner pot.
  2. Throw all the solid ingredients into the steamer basket.
  3. Set the steamer basket into the pot.
  4. Pressure cook for about 50 minutes. I left the pot over night after switching Instant Pot off since I started cooking around my bedtime.
  5. Open the lid of instant pot, pull the steamer basket up, and then drain excess liquid.
  6. Separate lard and gelatin into a small bowl. The rest can go into a garbage can. I kept the meat part in another bowl which is good as an ingredient for friend rice or any other cooking you can imagine.
  7. Throw the lard and gelatin back into the pot.
  8. Churn with a hand mixer. The transparent liquid should turn to white. I am guessing it is emulsion.

You can now keep the broth in a tapper ware in refrigerator. A state of the broth will turn solid over night and become like gelo. Separate it into small plastic bags and you can preserve the broth frozen in freezer. This way you can defrost the broth only as much as you need at a time without worrying about all of them being decayed.

For making tonkotsu ramen noodles, you still need few more steps. You will have to add "kaeshi" sauce (かえし)to the tonkotsu broth so that it tastes like the ones you eat at shops. This is for another story in another time. Until then, take care of yourselves and each other.
