Sourdough addiction

When you start working with sourdough you can't stop. It really is like some kind of an addiction. The entire process is fascinating and you're so happy when you see your dough growing and getting golden brown in the oven. Your work is transforming flour and water into something utterly delicious and you can see the result right away.

It does require a lot of time but it is worth it. It works like meditation for me and I enjoy the process. The only thing that I don't really like is waiting for the bread to cool down. This is frustrating as you want to try it but you can't because if you cut it too soon you spoil everything. Right now, I have another sourdough on the cooling rack. I think that I have to wait for one more hour and then I will finally taste it!

I enjoy it a lot and I think that as long as I can manage two breads each week I won't need to buy them in the store anymore :)

I've started with sourdough too! So good an hour out of the oven! Mine is not so good the next day though. And there is no bread flour to be had in the stores. Where did all the bread flour go? Few people even know how to use the stuff.

I'm sorry to hear that it's not that good the next day. How do you store it?

We don't have problem with the bread flour, it's more the rye flour that I can't find anywhere. Luckily, I have a friend who grinds it for me these days..

I think many people try out new things during the lockdown and baking seems to be very popular ;) If you can't find it in the store, maybe you can purchase it online?

I found some on amazon, but I try not to feed that beast. I'll just take a break until the flour shows up in the stores again. It has to eventually.

And I store it, once it has been cut, in a plastic bag, which I know is not good for the crust. I used the bread yesterday to sop up some nice juices - it's still good for that.

Is there no local mill where you could purchase it? That's how I do it. I have never ordered anything on amazon, so I understand your decision. Taking a break is a good idea too! :)

Maybe, you could try to store it in a linen cloth and see the difference. If you don't have it you can try cotton towel too...

I once almost bought a beeswax cloth bag for storing bread, but it was $30! I'll try a linen cloth next time. Thanks for the suggestion
