Cheeze, Please!
As a vegan, two of the most common questions I hear are, "was it hard to give up cheese?" and "is it difficult living with a non-vegan?" Not at all, and not really. It wasn't hard at all to give up dairy cheese once I realized I was stealing milk from a baby cow. And no, it's not that hard to live with a non vegan because…anything you can eat, I can eat vegan.
I cook whatever my man wants and I veganize it for myself. So tonight when Michael said he wanted a pork chop, I got creative with the side dishes. Garlic mashed potatoes; sautéed broccoli, onions, and mushrooms; and a cheese sauce for anything and everything. Does it look like I'm cheese deprived? I can have all the cheese I want—as long as it's not made from cow's milk.
I'll be honest with you: I didn't completely make this cheese sauce from scratch. "Nobody got time for that!" I grated approximately 2/3 of a block of Daiya cheddar and melted it on the stove with roughly two tablespoons of Earth Balance butter. Once melted, I added roughly a quarter cup of unsweetened almond milk and two tablespoons of nutritional yeast. It didn't quite have the creamy consistency I wanted so I added a heaping spoonful of the creamy, garlic mashed potatoes and gave it a good stir with the hand mixer. Easy peasy!
