Pane Carasau
Il pane Carasau, considered one of the oldest breads in the world, its a typical Sardinian bread, also known by the name of "carta da musica" refers to the crunchiness that the bread takes on and the characteristic noise when it breaks! :p . Il Pane Carasau looks like a host.. It is the shepherds' bread.
The entire processing phase which in Sardinian dialect is called "sa cotta" ("sa" in sardinian language mean "the", "cotta" like "production" maybe..) was once considered a family ritual and was performed by 3 women, friends or relatives, who helped each other or were rewarded with oil or "ricotta".
We can summarize all the processing in four phases: the preparation of the dough, the leavening, the cooking and the carasatura (hence the name of the bread) which would be the second cooking of the bread used to toast it. Carasau bread, provides a high energy supply due to its reduced water content, is fat-free and has a good amount of protein, vitamins and minerals, the presence of gluten makes it not suitable for people suffering from celiac disease. You can taste it in many ways, the two most famous are the pane guttiau and the pane frattau, but also natural it is very good, accompanied by meats and cheeses.
