Well, I don't do much baking with sweetener alternatives such as stevia, but I suppose you could try using something like that in place of the sugar. Or, you could replace the maple syrup with mashed banana or applesauce. You'll probably need to adjust the liquid in the recipe and maybe add a little more. I hope that's helpful. ;)
