In Thailand we only use "2 year old ginger" (as in 2 full seasons in the ground) for medicine & tea, and "young ginger" (just one year in the ground) for cooking. Is that the same in Costa Rica?

Oh that's very interesting, I hadn't thought about it although its always the more mature roots that are harvested now I think about it so yes its quite likely the same. Brilliant comment thank you xx
