One of my favorite source of Vitamin A
We use different parts of vegetable plant like seeds, roots ,fruits, leaves, vine, stem, shoots and flowers in our kitchen. There are few vegetables that we can eat almost every parts of their plant and one of the famous is "Pumpkin" .
We can eat Fruit(Pumkin), young leaves, shoots, soft part of stem and flowers of pumpkin. It is the best source of Vitamin A, Vitamin C, Calcium and Iron .
I would like to post few photos of Pumpkin plant taken with Canon 700D in my garden.

This little young pumpkin is best and testy to eat as vegetable with mixing other vegetables like Capsicum and potato .

With stem ! We can also use inner part of stem as vegetable after removing cover !!
Pumpkin Shoots !
Best part is the shoots of pumpkin plant to eat as vegetables . This is the one of the major seasonable green vegetable in Nepal. Fried and wilted shoots are best. My favorite is fried shoots of Pumpkin. This is helpful to control Blood pressure, constipation, reduce risk of cancer and boost our immune system.

I know you can eat the flowers but I have never personally tried one yet. I still have some flowering in the veggie garden. May have to try one.
We can use small flowers ready to be bloomed as vegetable.
