Chickpeas Mozzarella Spinach and Bacon loaded Sweet Potatoes

Hello everyone,

How is everybody doing? Where are your thoughts right now? Cause when I hear this question, I can always say FOOD! So, yup! Food is my truly guilty pleasure. If you feel the same, hopefully this recipe will strike you like BOOM!! Very easy to make and delicious! Please, try it!!

Its spring here right now. And the gardens are full of greens and legumes. Thats why we always try to have a dish that make a very fantastic couple with a fresh salad. You can have a salad as main dish ofc, but not always. Sometimes you just need that comfort hot food and a salad on the side.
So, here I present you our lunch. We enjoyed it with a salad.

INGREDIENTS
3 sweet potatoes
One big handful of spinach
150g mozzarella cheese or just cheese
50g bacon
150-200g canned chickpeas
Spices mix for potatoes: garlic, onion, coriander, black pepper, red pepper, salt, etc

INSTRUCTIONS
Boil the potatoes
Meanwhile, cut the bacon in small peaces. Also, chopp the spinach and cheese.
Rinse and strain chickpeas.
Mix these ingredients: bacon, cheese, spinach and chickpeas.
When the potatoes are boiled, remove the water and let them 5 minutes to cool down.
Preheat the oven at 180-200 celsius.
Put baking paper on a tray. Cut the potatoes in half, but dont separate the halfs. Take care to not cut the potato skin. This is what keeps the halfs together.
Add condiments to the potatoes and then add the mix on top.
Put the tray in the oven for 15-20 minutes.

As I said, I had these delicious sweet potatoes with a salad. These are the ingredients if you wanna try it. These two were perfect together. The fresh greens are imprerious neccesare in salads.

SALAD INGREDIENTS
Arrugula
Spring onions
Red radishes
Cucumber
Pumpkin seeds
Green olives
Yellow pepper
Pistachio oil (this is what I used but you can use any other vegetable oil)
Salt and pepper

Thats all! You need aprox 20 minutes to prepare the potatoes and another 15 to make the salad. You can make it in smaller or bigger portions.
I love sweet potatoes. They are so versatile so you can make infinite recipes with them: desserts, sauces, soups, loafs and sweet bread, dips, side dishes etc.
