Meal Prep
Since I have been constantly traveling back and forth Beaufort-Kota Kinabalu and moving from one hostel to another, I had not been watching my nutrition carefully which in turn causes me to get sick and tired easily. So I decided to take a step and go back to meal prep for the whole week's lunch (since it was my biggest meal in the entire day). This was not my first time doing meal prep, I did it before a few years back and it gave me a tremendous health benefit. Also, one good friend of mine suggested me to go vegan for a week as a baby step to start. I had been expressing my interest to become vegan for quite some time but never get the chance to do it.
So I went shopping last Sunday and came home with a bunch of vegetables and fruits that I decided on my meal prep. Just by looking at the colors of the food already making you feel good. Since my meal prep was a clean concept, I went straight to the frozen and vegetable section. I am stuffing broccoli, lettuce, yellow capsicum, cherry tomato, apples and choy sim for my fibers. As for my carbs I took some potatoes which cost me only RM1.95. Since I am trying vegan, my protein will be soy based. I took two packet of beancurd pieces.
Shopping whole food will cost you way lesser than buying processed food like biscuits, canned food, chips and quick meals like instant noodles. Usually my meal prep will cost me lesser than RM50 which will bring me a week worth of meal.
So this was the outcome of the meal prep that I had prepared for almost 1 hour half. I stir fry my veggies and beancurd and baked my potatoes with herbs. Since it was already too much I decided to keep the choy sim, lettuce and cherry tomato for my family. Apples are just in case I get hungry at night time. My daughter had been watching me prepping my meals and it delights me to see her eating the yellow capsicum which she so attracted by the vibrant color.
So there you go, my whole week of lunch. I packed each food in a separate container and immediately place it in the refrigerator. The next day off to work I placed it in the hostel refrigerator and took out some enough for the day's lunch to reheat it. I felt good for eating more veggies. However, due to my work nature, my whole week vegan plan was not complete as some of my clients buy me meaty lunch 😅 which unfortunately I am unable to decline.
Overall, I am happy that I am able to cut my cost in food and be healthy at the same time. In the end, I bring my apples back home as I had no chance of getting hungry at night due to being busy at work and probably the lunch was so fulfilling it last till night time.
