Enhancing nutrition after illness: pancakes?

We have had some bad luck on our homestead! Since we had to be briefly in Belgium at the beginning of May, the MCS (= multiple chemical disease) has had a lot of grip on us. I  have been out for 5 weeks because of a stomach virus and now our  daughter has been sick for a whole week ... If you are an nature person, you are putting a lot of energy into heavy work, just by dealing with  the elements around you. Good, healthy food is important! We do not eat large quantities but eat very varied, raw from the garden, fresh in the wild and usually a more finished meal at the evening. We go for our gut feeling for food. 

My husband and I have considerable reserves of bodyfat, we have brought some fat storage from years of living in stressful Belgium. Our children, on the other hand, can be called streamlined. So if they get ill, then we have to intervene to counter underweight and quickly return to their normal weight. When the climate is demanding, you need strength and balance and power. So you need your body to move and act, but even to keep yourself safe in daily life. 

Now that our youngest  daughter is recovering from a big stomach virus, I was looking for the  ideal boosting food and what did I found? "Pancakes"! After  some research, it turns out that pancakes are a bit of a "holy  breakfast" and now I understand why, if I let my daughters do, they  would make pancakes every day, but we also have endless variations! 

So we have skinny pancakes!
200gr speld flower (is the ancient flower and much healthier for the body)
1 / 2l spray water = makes your dough light and with this you can make very fine pancakes
3 eggs (preferably from your own chicken)  

Very rich pancakes!
200gr speld flower (is the ancient flower and much healthier for the body)
1 / 2l fresh raw goat's milk or raw cow's milk, or cream from the farmer
3 eggs (preferably from your own chicken) 

Variations!

  • always nice is adding chocolate powder to give your pancakes a different color
  • apples in the dough or other fruits
  • put yogurt in the batter for a different taste
  • supperfoods such as chia seeds, chlorella or spirulina ... 
  • herbs: you can use whatever you like from calendula, to leaves from hemp
  • oatmeal in your batter is also very delicious
  • use other types of flower 
  • use beer in your batter

Tips for smearing your pancake!
The well-known confections with sugar are always delicious, but of course they are less healthy. I  am much more a fan of sour yogurt on my pancake or the combination of  yoghurt and jam (preferably from my own kitchen :-), delicious is also  elderberry syrup on your pancake this is a very rich taste pallet and soooooo healthy. Obviously fresh fruit is nice but also savory pancakes can. My husband prefers to eat a pancake with peanut butter (and yes they can also be homemade). 

So this is my best tip to support "heavy work" or "stable after illness"! The  foods and vitamins of fresh jam will strengthen you physically quickly  and certainly in children they like to be eaten and are actually not so unhealthy as everyone thought!
