ALMOST PALEO PIZZA… YES THERE IS SUCH A THING!
So Pizza has to be one of those fabulous gluten laden foods that when you go Paleo you think you’re going to have to go without for the rest of your life - AGHHHHH. Well rest assured I have found an alternative that is absolutely delicious and you won’t be missing the gluten at all! This has parmesan added to it so it can’t technically be called Paleo but you could leave it out if you wanted to make it a ‘PPP’ purely paleo pizza!
Ingredients
Cauliflower Base
600G Cauliflower Florets
¾ cup (90g) Almond Meal (Ground Almonds)
½ cup (40g) Finely Grated Parmesan
3 Eggs, Lightly Beaten
Sea Salt and Cracked Black Pepper
Suggested Toppings
You can use whatever toppings you like but don’t use anything too wet or the base will lose it’s crispiness and fall apart. I used the following and it was amazing:
Sliced grilled peppers
Thinly sliced Prosciutto
Crumbled Persian Feta
Caramelised Onions
Rocket
Method
01 Preheat oven to 200C. Line a baking tray with non-stick paper. To make the cauliflower base, place the cauliflower in a food processor, in batches, and pulse until it resembles fine crumbs. Transfer to a large bowl, add the almond meal, parmesan, egg, salt and pepper and mix to combine.
02 Press out ingredients into a thin layer to create the base and cook for 25-30 min.
03 Take out of the oven and layer the base with ingredients and cook for a further 10-15 minutes depending on the toppings.
