Well, the main season for Ramson aka Wild Garlic is over, but still, the flowers, flower buds and seeds could be eaten fresh in a salad or just put into a smoothie to get the extra spice.

Usually, the leaves are the main crop, for fresh usage in salads, smoothies or just onto a piece of bread with some butter in between or make it into a pesto for fresh or later usage during the year.

Its medicinal qualities come from a lot of Vitamin C, iron and essential oils and it has a detoxifying and cleansing effect as well as it helps in regulating the intestinal flora.

Ramson is a great perennial understory plant in a food forest. It belongs to the herbaceous layer where it covers the soil well in the early months of the year as well as its juice helps to repel insects and moles. To grow best, it prefers woodland conditions with shade and moist soil.
