Homestead Crockpot Meatloaf
It is quite simple to make, and cooks in no time really.
Homestead Crock-pot Meatloaf
In a 3 qt. crock-pot spray with olive oil and line with a coil of foil(just scrunch up a long piece of foil till it looks like a snake and then place it in the crock pot to keep the meatloaf off of the bottom of the crock pot while cooking. This is to allow the fat to drip down and away from the meatloaf. Turn to high to preheat.
In a bowl mix together the following:
1/2 lb. Organic Grass fed Ground Beef
1/2 lb. Favorite Sausage( I used a ground sweet sausage)
1 egg
1/3 c. Milk( I used Organic Whole milk)
1 c. Rice Crispy cereal( there are several organic versions out there)
1 Tbsp. Italian seasoning
1 tsp. Worcestershire sauce
1 tsp. ground mustard
1 tsp. minced dried garlic
Salt and pepper to taste
Once you have gently mixed all ingredients together, place the meat loaf on top of your foil snake in the crock pot.
place your Bacon strips on top of your loaf in your desired pattern :) cover with lid and cook for about an hour and a half to two hours on high.(I turned the heat down to the keep warm setting on my crock pot for a few hours because we were not ready to eat yet so it may take a bit longer)
If you prefer not to add the bacon(it is optional) you will want the sauce.
It is nothing fancy but I love it.
In a small bowl mix together the following:
I use about a half cup of ketchup
1 tbsp. prepared mustard
2 tbsp. sweet pickle relish
2 tbsp. brown sugar
stir together thoroughly. I normally make a double batch when I male a larger meatloaf. This one is small so you can get away with this amount.
I served it with a Baked sweet potato and steamed broccoli!
