Typical Indonesian Meatball Recipe

Ingredients:
- 500 grams of beef, washed and cut into small pieces.
- Enough beef bones as stock.
- Prepare ice water.
- 1 chicken egg (take the egg white only).
- 9 tablespoons Tapioca flour.
- 2 measuring spoons of fine salt.
- 1 measuring spoon of ground pepper.
- 1 measuring spoon of baking powder.
- 1 tablespoon garlic powder (you can also use 4 pieces, but fry them first).
- 2500 ml water.
- Ice cube fragments are around 100 grams.
Ingredients for gravy:
- 2000 ml water (leftover cooking water for making meatball pentol).
- 12 pieces of garlic, crushed.
- To taste Sugar, salt and pepper (to taste).
- 1 stalk leek, sliced into small pieces.
Supplementary material:
- Sufficiently boiled Pak Choy vegetables.
- Sufficient amount of boiled white and yellow noodles.
- Enough green onions, chopped small.
- To taste sauce and sweet soy sauce.
- To taste boiled chili sauce.
How to make:
Cut the meat into small pieces, then grind the meat until smooth, add the ice cubes little by little, add the egg white, process until smooth.
Add tapioca flour, baking powder, garlic powder, pepper and salt, then process again until evenly mixed and the texture of the mixture is like pasta.
Once the mixture is ready, cook the water until it boils then turn off the heat on the stove.
Shape the dough into a ball with your hands (see picture) then with the help of a tablespoon, put the mixture into the boiling water (so that the meatball mixture doesn't stick to the spoon, dip the spoon occasionally in the water).
Do this until the mixture is finished, turn on the stove to medium heat, wait for the meatballs to float.
Once it floats, lift it little by little and put it in ice water.
Once cool, then remove from heat and drain.
How to make meatball sauce:
Saute the crushed garlic until fragrant, then put it in the water left over from cooking the meatball mixture mixed with bones then boil, add salt and pepper, let it boil.
add spring onions. Remove and ready to be used as meatball sauce.
Presentation:
Prepare a bowl, add enough white noodles and yellow noodles, arrange the meatballs and pak choy with sauce and sprinkle with green onions.
Add chili sauce, boiled chili sauce and sweet soy sauce.
