Green soup served cold!
This modest vegetable is perfect on hot days as it contains water in more than 90%. Cucumbers supply us with valuable minerals, among them are those that are depleted when we sweat like potassium, magnesium and phosphorus. They also contain some iron, sodium and zinc. We can find vitamins A, B6, C, E, K, riboflavin and niacin in them. Cucumbers are alkaline and simply delicious! They are perfect for cold soups such as the one I want to recommend today.
INGREDIENTS:
-100 g vegetable yogurt (I added rice yogurt)
-1 cucumber
-2 handfuls spinach
-½ avocado
-pepper
-asafoetida / garlic
-lemon
-5 tablespoons cereals (soaked earlier) – I used amaranth cereal
-coconut oil
-sea salt
-lavender
I mixed the following ingredients and blended together.
