in singapore, we eat bamboo shoots especially chinese new year too. the chinese word for bamboo is zhu sun (pronounced : soon in english) and sun basically means smooth sailing. so you eat it for a smooth sailing business, career, wealth, life etc.
@ryanng - Thank you sharing that. I find the symbolic meaning that Chinese people give to the natural world so interesting! I have been to Singapore many times, one of my favorite places.
