Coxinha, the perfect Brazilian Snack!
Hello my friends,
today I escaped a little of my diet and made some of my favourite brazilian snacks, the COXINHAS.
Coxinhas are Fried Chicken Croquettes and so delicious, that today I want to show you the recipe: You need for 25 pieces:
- 1l water
- 1/2 kg de flour
- 1 chicken buillon
- 1/2 tbsp. butter
- 1/2 tbsp salt
- 1/2 tbsp. sweet paprika powder
Filling:
- 1/2 kg cooked and shredded Chicken Breast
- 1 cut Onion
- 100 g prasley
- a little bit of chili
- 1 piece of garlic
- Creamcheese
- salt
- sweet Paprika powder
- olive Oil
Coating:
- 1 egg white
- 1/2 l water
- salt
- flour
- breadcrumps
For the dough:
- Mix up all ingredients except the flour and let it boil.
- Add the flour and mix everything until it isn’t sticky anymore.
- Take the dough and put it on a straight surface.
- Let it cool down, but mix it sometimes to not build a crust.
For the filling.
- Stir first the garlic, onion e chili, then dd the shredde chicken brest. Also, add the sweet paprika powder and salt. Mix it up with the fresh parsley and creamcheese and let it cool down.
- Rub ome butter in your hands and take a bit of the dough. Form a little bowl and fill it with some part of the filling.
- Now take fringe of the dough and close the bowl, forming an egg.
Now:
- Mix the water with the white of the egg, flour and salt until it becomes homogene.
- Put the Croquettes first in the Water-Egg-Mixture, and after this, put it in the breadcrumps. Do this twice.
- Heat the Olive oil up to 190° degrees and fry them until they get golden.
Let them dry and voila – perfect snacks!
