WEIGHT LOSS RECIPE - PEANUT POTATO SALAD
For making this amazing recipe you will need the following
2-3 boiled potatoes or sweet potatoes whatever you like the most
Feta cheese, you can use cottage cheese or paneer totally up to you
Spinach leaves, you also use any green leafs of your choice i prefer spinach because its high in iron
2-3 mushrooms
half cucumber
half capsicum, i like to use different colours to make my meal look amazing.
onion, 1 half cut onion
Cabbage - its totally optional, i like to add as much veges i can. you can use vegetables of your choice or that are easily available.
2 fresh tomatoes
1 lemon/lime
olive oil
*roasted Peanuts, you can also use boiled chickpea if you like
black pepper powder
garlic & herb seasoning
Dry mango powder or chaat masala you can easily find it in any asian/Indian grocery store.
SO LET'S GET STARTED!
Peel and cut your potatoes and put it in a microwave for good 7-8 minutes now while our potatoes are heating up chop all your vegetables and put everything in a big bowl.
now take a pan (non stick preferably) and roast your peanuts for good 1-2 minutes until you see them going crispy brown and leave it in a bowl to cool down. if you are using chickpea you can skip this step.
By this time you should have boiled/microwaved your potatoes so take them out. take the same pan we used for peanuts and put 2 teaspoon of extra virgin olive oil,transfer all your potatoes to this pan once the oil is hot enough and keep tossing until potatoes become crispy golden brown. empty in the chopped vegetable bowl and mix peanuts to it.
We are almost there, Squeeze a fresh lemon or lime in the bowl and add 1/2 table spoon of salt and 1 spoon black pepper. now sprinkle the garlic & herb seasoning, pinch of dry mango powder and cut 1-3 slices of feta cheese.
And now we have healthy potato peanut salad!
