Lentil soup
Here is a quick, delicious and healthy lentil soup recipe. With chopped mushroom, onion, red bell pepper, garlic, oregano and basil.
Ingredients:
1 cup Lentil soup mix (you can take these lentil from your kitchen as well. Mixture of green split peas, yellow split peas, white long grain rice, pearl barley, alphabet pasta or any other small pasta,red split lentils) washed and soaked in the water for 2 hours.
3 tablespoon olive oil
½ teaspoon Oregano crushed
½ teaspoon Basil leafs crushed
Black pepper corn crushed
4-5 big cloves of garlic finely chopped
10 mushroom Chopped
½ cup chopped sweet red peppers.
Preparation method:
In a pressure cooker add drained soup mix.
Add 2 and ½ cup water put the lid on; let it cook on high heat till full pressure comes then turn the heat on low and cook for 10 minutes.
Let pressure cooker release its pressure itself. Open pressure cooker’s lid and give a nice stir. Add 3 cup water, mix very well and keep it side.
Heat a non stick pan. Add olive oil. Add chopped garlic fry for 20 seconds add onion fry for 1 minute add chopped vegetables fry for 2 minutes add soup mix and mix well with the vegetables.
Add crushed oregano, basil and black pepper. Cook on medium heat till starts boiling.
Turn off the heat, remove soup pot from the heat and serve hot
