The caramel tree, whose scientific name is cercidiphyllum japonicum, is a species of flowering tree in the cercidiphyllaceae family native to China and Japan.

Also known as katsura (from the Japanese name), it is a deciduous tree with a height of 10 to 45 meters and a trunk diameter of up to 2 meters.

The small leaves grow in pairs on long shoots, and larger leaves singly on shorter shoots, and are rounded with a heart-shaped base and serrated edges.

In the fall, the leaves turn pink or yellow and sometimes have a distinctive caramel scent.
