History of Somtam: The origin of this spicy and delicious food
The word “som tam” is a combination of two words: “som”, which is a local word in the northeastern region and means sour taste, and “tam”, which means using a kitchen tool, a pestle, to pound the ingredients together. When these two words are combined, it means sour food that is pounded or grinded. However, the word “tam som” in the northeastern language has a broad meaning. People in the northeast call som tam as “tam bak hung” or “tam mak hung”.
“mak hung” is papaya in the northeastern language, and “tam tangkwa” is “tam mak tang”. “tam thua” is “tam yardlong beans”. The method of making it is similar to “som tam” but instead of papaya, yardlong beans are added. The pounding is done with two types of som, lime and tamarind, and fermented fish.
