Nice post on kimchi, I love eating the stuff. Especially when I've been in South Korea, they have really well aged kimchi and it goes together with Korean BBQ great.

I don't think kimchi refrigerators are common outside of Korea, but I know a lot of people who have an extra chest freezer or refrigerator in the garage or the basement. It's sort of like this.

Everyone should have a kimchee fridge to store their kimchee. It prevents the food in your other fridge from smelling like kimchee.

Fascinating post! A kimchi fridge?! It seems like they have an entire domestic industry around making kimchi at home. This is the sort of thing you'd never realize without actually going there and staying for a while.

During this time of year, they are prominently featured in home electronics shops. I think of it more like a second fridge with better temperature control. I keep beer in one drawer chilled to 7C. The other drawer has kimchi, pickles and sauerkraut at 5C. My fridge is at 2C which is too cold for most beers and fermented stuff.

Kimjang is a great place to experience and learn kimchi.

That sounds so healthy and tasty, not having to worry about making for sometime. Lovely learning about traditional Korean cooking with recipes handed down through the ages @abitcoinskeptic

I finished reading this with the water bowl, this is one of the things I definitely have to try someday! how delicious it looks and what a good tradition!

If you haven't tried kimchi, you should eat some. I would recommend trying a few varieties or making a small batch before making 100kg~
