Keto Burger Bun/Dinner Roll Recipe

Howdy Steemies :) Are you Keto too?

Since eating Keto helped me in such a profound way, I'm here to share one of my favorite recipes with you.

I found this one online around Thanksgiving of last year and not only were they a hit with my Keto community, even Non-Keto peeps loved em too.

I added coconut flour to the original recipe to make if more dense since I was using duck eggs (I'm allergic to chicken eggs) which are HUGE.

Honestly, though, even when I make these for someone else using chicken eggs, I put the coconut flour in and they're awesome.

Ingredients:
1 1/4 cup Almond Flour (I use Now or Bob's Red Mill depending on the current price)
1 Tbsp Coconut Flour (Same brands as above)
5 Tbsp Psyllium Husk Powder (If you can only find Whole Husks, be sure it's finely ground using a coffee grinder before you measure it out.)
1 tsp Salt ( I prefer Pink Himalayan Salt)
2 tsp Apple Cider Vinegar (Bragg's brand is the best!)
3 egg whites (when using duck eggs, go for two large eggs instead of 3)
1 1/4 cup filtered water

Tools:
Large Bowl, Spatula, Sheet of Parchment Paper, Cookie Sheet, Measuring Cup, Measuring Spoons

And, throw in two Extra Small Bowls if so desired to separate your eggs.

Recipe:
-Preheat your oven to 350 degrees.

-Start to heat your water on the stove or in the microwave for 2 minutes, just until it begins to simmer. While you wait for that to happen, mix your dry ingredients together in a large bowl with the spatula.

-Go ahead and pour your hot water over the dry mix and fully incorporate the liquid. You'll want this mixture to cool a moment and then you can add in your wet ingredients, saving your egg whites for last. This way, you don't get scrambled eggs!

-Knead this mixture with your (clean!) hands and watch this gooey mess become a nicely formed (very malleable) ball. Wash up and line your cookie sheet with parchment paper.

-You can start to create your rolls, fitting them onto the cookie sheet with at least 2 inches between them.

*For 6 Large Burger Buns: roll into balls and pat them down ever so lightly so they are still round but not too high when they bake.

*For 8 Small Dinner Rolls or Slider Buns: simply roll them into small round balls.

-Let them bake at 350 degrees for 40-60 minutes. You want them to be a golden brown.

IMPORTANT :) When done, they must cool for a while. That's how a lot of the Keto baking goes. Always let your stuff cool for at least 40 minutes before digging in.

These babies are so versatile:

*BURGER BUNS/SLIDER BUNS

*BREAKFAST TREAT- Spread with butter or lard and sprinkle cinnamon, salt, stevia on top
(if you're Dairy Free try Kite Hill Cream Cheese or Coconut Manna instead)

*HERB DINNER ROLL- Add herbs of your choice before baking in the oven- try Herbs De Provence or Pizza Seasoning by Frontier Co-Op
