Archeologists taking honey from Egyptian tombs that was in pots, found the honey still preserved and safe to eat, a true eternal self life.

A few examples of foods such as this are sugar, salt, dried rice sre just a few.

Honey is indeed something special in that you can use it even though its 1000 yrs old, and without any preparation.

The chemical makeup of honey is that it is a sugar and considered (hygroscopic). It contains little moisture naturally but can absorb moisture if left unsealed. In its natural form it has very low moisture, means that bacteria, microorganisms have a hard time surviving in it and die from being smothered. The rule here is, that in order for honey to spoil it needs something inside it that can spoil. With the kind of environment that honey presents, organisms do not live long enough to spoil.

Bees will gather nectar, in their stomach is a an enzyme that is called glucose oxidase. This enzyme mixes with the nectar, breaking it down into 2 by-products (gluconic acid) and (HYDROGEN PEROXIDE). Hydrogen peroxide works to stop bad things from growing. After the bees regurgitate the nectar into the combs they use the beating of their wings to remove the moisture content left and seal it with wax.

Honey has been used a very long time for medicinal purposes. It is thick, rejects growth and contains HYDROGEN PEROXIDE !!! Honey can cover a wound or a burn and nothing will grow on it, a eternal bandaid with a bit of hydrogen peroxide .

Uncovered honey will absorb moisture and vent off some of the HYDROGEN PEROXIDE that is needed. Store purchased honey is processed, what they did was destroy the properties of the honey through heating and straining where it removes the abilities for molecules to crystallize on. As long as it is sealed it will still be good but pure unprocessed honey is the best bet.

Do you have a favorite type of honey? Ive recently moved to SoCal and have found avocado blossom honey - its AMAZING! Not too sweet, but certainly full of flavor :)

I like any kind that is not processed, I am in the North East so a lot of honey and maple syrup. 8 }

Im originally from the east coast - Massachusetts -, so Ive got a little snobbery in me when it comes to Maple Syrup :P
