Working and dehydrating carrots!

I've had a pretty busy week and really not much to show so I haven't put up a post in a while. I have spent a lot of time doing crafts besides everything else and I haven't finished anything yet.
But I haven't forgotten about you! I try to stay updated on eSteem, at least I'm able to read posts and give some upvotes. I also noticed I have over 165 followers and that's just great!

We went up to the dairy a couple of days ago. We've had lower production for a period of time so it hasn't been as regular as it usually is, but we went up to pack and ship some of the hard cheese. I got into turning the cheese in the smaller storage and we also packed a lot to ship. We counted the amount of cheese I had been lifting that day and I turned 280 kilos in the storage and then we packed up about 130 kilos for shipping. So in one day I had lifted about 420 kilos of cheese. Some of it more than once. I didn't do a lot the next day and I had no trouble sleeping that night. Agnes went up the next morning to ship it and she packed the car so full that the guy that was driving the delivery car had a fun time watching how she stacked all of the cardboard boxes. In an old volvo! That's the beauty about being part of a small business. The build of the new dairy is about to start here in our little village so we hope that it's not going to be long before we can start to move the cheese that are in the storage, that's the first thing that needs to be done. Then the dairy itself will be built so that we can get all the production going here instead! That will be so nice!

I also got around to harvest all of the carrots in my garden. I got some great help from my daughter harvesting and then I put most of them in the dehydrator. I wanted to do something other than canning, it'll probably be a nice addition to the small food storage I'm planning to have at our offgrid cabin.

I didn't get a lot of carrots, some were so tiny that it wasn't worth the effort of peeling them. I got enough to fill up the dehydrator and the rest I just roasted in the oven. They will be nice to have for dinner tonight. Roasted with olive oil, honey, sea salt, black pepper and homegrown parsley. I'm doing a stew on moose tonight so that will be great. I also got some potatoes from a friend who is a farmer. I will tell you more about how we barter in another post. He's worth mentioning in more than a sentence.

Now it's only the parsnips left in my garden and I won't harvest them before the first freezing because I have been told that they will be sweeter if they stay in the ground until after the first frost. I'm really looking forward to trying and dehydrate the parsnip too.

I would really like to hear if there's anyone who have canned parsnip? How does it turn out, does it get more intense flavours?

Thank you! I didn't know anything about preserving food less than a year ago so it's all new to me. I'm just thrilled that I can so I feel the urge to try everything :-)

I can't help you with the parsnips as I've yet to grow them....planning to next year...but I have a question about drying carrots. Do you just blanch them for a few minutes before dehydrating them or do you cook them fully...or maybe you dry them raw? I have lots of carrots in the garden that will need attention soon. Those roasted ones look delicious!

I followed the recipe from ball blue book. I blanched them for three minutes and then into a bowl of cold water before dehydrating in 125 deg F. Now my dehydrator broke so I'm drying them in the oven. If you try, let me know what you thought of it! curious

YOu lifting the cheese reminds me of when I had my store. I was lifting so many produce boxes every single day!! And I was tired every night too :)

Yes, I will be sharing pictures of the new dairy! It's a big event for us living here, we don't have a lot so every addition is very appreciated. It was a fun thing to figure out how much I actually got to move around, but it's also a reminder that it really adds up. It's a nice tired too when you're working and you know that you earned the right to almost fall asleep during dinner :-)
