How To Prepare Nigerian Vegetable-Okro Soup

INTRODUCTION

Greetings fellow Steemians. It's @eno-obong0 's first post on this community. Going through my introduction post, one would come across the paragraph where I said I will write expository information such as 'How To'. Well, this is the first of it.

Vegetable-Okro soup is a ubiquitous Nigerian delicacy meaning it is prone to having many recipes. I'll take you on a journey through the Southerners' recipe.

INGREDIENTS

1- Palm oil


2- Sliced cow skin and dry fish
3 -Shredded vegetable or pumpkin leaves
4-Washed periwinkles
5-Sliced okra
6- Sliced onions (optional). You could chop yours.
7- Ground or pounded pepper and crayfish
8- Salt and seasoning cubes
9- Meat stock or broth
You may chose to use cow meat or goatmeat.

COOKING, THE MAIN DEAL

1- Firstly, the pot is heated up. Half of the palm oil is poured in. When bubbling hot, sprinkle your onions in and saute till golden brown.
2- Add your okra and stir till the oil is well incorporated

3- Add the broth in next
4- Add water and stir
5- Cow skin next
6- Stir in your ground scotch bonnets and grayfish. Preferably, add your salt and seasoning cubes to this mixture then throw them into the pot. Stir. If you're doing it right, the aroma from your kitchen should arrest every olfactory lobe in your neighborhood
7- Dried fish goes in next. It is advisable not to add this early when cooking due to its tendency to disappear from pot or in literal terms, cook into much tinier bits
8 -Stir in your washed periwinkles
9- Add your pumpkin leaves. You may decide to add a small or large quantity of it depending on your preferred consistency. If you want you soup thick, go in with plenty sliced leaves. If you want your soup less thick and somewhat sticky, go in with less leaves.
10. Believe me, at this point you wanna go in with the other half of your oil to avoid your soup looking overly green
11. Some people go in with more oil but I stop when the soup looks this way
